Impastare gli ingredienti con la punta delle  dita, quindi unire il burro ammorbidito e tagliato a tocchetti e l’uovo  leggermente sbattuto.&amp;nbsp;Lavorare l’impasto e spolverizzarlo con il grana.  Impastare nuovamente e formare una palla, spennellarla di olio e.v.o e  sistemarla in una ciotola anch’essa unta con poco olio. Coprire con  pellicola per alimenti e lasciar lievitare per almeno 45  minuti.&amp;nbsp;Trascorso questo tempo, dividere l’impasto in quattordici  palline e modellare ciascuna di esse a forma di bastoncino dello  spessore di un dito; arrotolare i bastoncini formando delle piccole  ciambelle e disporle sulla placca del forno unta di olio. Prendere uno stampo rettangolare di circa 33x23 imburrarlo ed infarinarlo.&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="font-family: Annie use your telescope;"&gt;Per  la base montare con le fruste le uova con lo zucchero fino ad ottenere  un composto spumoso, poi aggiungere la farina setacciata con il lievito  il pizzico del sale, il burro fuso per ultimo aggiungere l'acqua,  mescolando bene.&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="font-family: Annie use your telescope;"&gt;Versare il composto nello stampo e cuocere per circa 20/25 minuti.&lt;/span&gt;&lt;br /&gt;&lt;span class="Apple-style-span" style="font-family: Annie use your telescope;"&gt;Nel  frattempo preparare la crema mescolando uova farina zucchero e succo di  limone, versare la crema sopra la base cotta e cuocere per altri 20  minuti. Fare raffreddare e spolverizzare con zucchero a velo poi  tagliare in piccoli quadrotti. Montare il resto degli  albumi a neve ben ferma con il cremortartaro .&lt;br /&gt;Cuocere lo zucchero a  118° C con l'acqua e versarlo a filo sugli albumi montati . Lavorare il  composto fino a quando è raffreddato . Incorporarli delicatamente nel  composto di mandorle .&lt;br /&gt;Versare in un sac a poches , e deporre i  macaron su un foglio di carta forno o Silpat  cercando di farli di  uguali dimensioni.  Lasciare formare la crosta per una decina di minuti e   cuocere a 155° nel forno ventilato per 10' . All'uscita dal forno ,  passare un po' d'acqua fra il foglio di carta forno e la placca di  cottura , in modo da stacare i macaron. Se sono stati cotti su Silpat,  staccarli a freddo .&lt;br /&gt;Guarnire con la crema e attaccare a coppie .&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Crema al burro&lt;/span&gt;    Etoile&lt;br /&gt;200 gr burro&lt;br /&gt;180 gr zucchero&lt;br /&gt;70 gr albumi&lt;br /&gt;40 gr acqua &lt;br /&gt;Cuocere   acqua e zucchero a 120° , Versare su gli albumi montati e continuare a  lavorarli fino a raffreddamento . l'uovo, la vanillina, il pizzico di sale e la scorza di limone, dopo averli accorpati bene unite anche le farine e il lievito setacciato. Lavorate bene fin ad ottenere un impasto omogeneo. Prendere dei pezzi dalla pasta e stendete aiutandovi con la farina, fate una sfoglia di circa 10 mm e procedete a tagliare le formine. Io prima ho steso la pasta, per ottenere l'effetto rigato ci ho passato sopra il mattarello rigato e poi ho tagliato le formine. Adagiate sulla placca forno ricoperta con foglio carta forno bagnato e strizzato, spennellate col latte e spolverizzare con lo zucchero. Infornare per 15 minuti a 180'C.
